I love pancakes! Throw in the word “Protein” and I am smiling ear to ear!
I have said it once and I will say it again healthy eating doesn’t have to be boring and bland. In fact its the opposite! When you remove highly processed foods and focus mainly on eating whole natural foods you will find yourself playing with a much wider variety of different foods and flavours.
But lets not get to righteous I am about to start talking about pancakes. Healthy pancakes but pancakes nether the less. This guys makes an awesome start to a Sunday, or any day for that fact!
- Using a food process mix together the oats, eggs, banana and protein powder and a pinch of cinnamon. Thats your pancake mix done.
- Heat up a saucepan on a medium heat with a little coconut oil and pour in your first pancake. Word of warning these are designed to be like american style pancakes so i wouldn’t recommend trying to make one huge one.
- Use the back of a spoon to shake your pancake to perfection.
- When ready flip, serve and repeat.
This should make between 3-5 pancakes and is best served with large spoon of greek yoghurt and fresh berries.
Posh Tip: drop a few blueberries into the mix as you add it to the saucepan and they will burst to add a little extra to the pancake.
