Enjoying the odd little treat doesn’t have to make you the bad guy. In fact enjoying the odd little treat is great way of taking the pressure of try to be “perfect” all the time. Having the odd healthy treats like these chocolate coconut fudges is a great way of keeping on track but enjoying the ride too.

I am sharing with you my favourite little treat! These fudges make the ultimate treat when served with fresh berries and a little greek yoghurt.

Instructions

This really couldn’t be much easier. Place the following ingredients into a food processor:

  • ½ Cup of ground almonds
  • 1 tbsp Almond butter
  • 3 tbsp Cocoa powder
  • 2 tbsp Manuka honey
  • 1 tbsp canilla extract
  • 2 tbsp melted coconut oil
  • Small pinch of himalayan salt

When its all mixed together put the mixture into a small container and press it down gentle with the back of a spoon. Garnish with a little desiccated coconut (just to be posh). Then put in fridge overnight….or a few hours if you just can’t wait.
