Everyone loves a curry right? Well on popular requests here it is! My super simple quick-time chicken coconut curry.

Its easy to get stuck in the mindset of healthy eating being bland and boring but it couldn’t be further from the truth. This super simple coconut curry makes an awesome meal packed with lean protein, healthy fats a great mix of different vegetables.

Instructions

  1. Heat up a little coconut oil in a woke and in goes the diced chicken breast.
  2. When the chicken is cooked next comes the vegetables. I normally use sugar snap pears, mange tout, courgette and those tasty mini corn on the cobs.
  3. Next add a large spoon of red thai curry paste (You can use green if you like things a little less spicy).
  4. Let it mix into the veg and chicken then finally add the coconut milk and leave on a medium to low heat for a few more minutes.
  5. Serve and enjoy!

P.S This goes great with Cauliflower rice or for a awesome post-workout meal enjoy with Thai jasmine rice.
